French Bresse chicken is a breed so prized in its homeland that it carries a protected designation of origin. At Big Ivy, we raise authentic French Bresse birds right here in the mountains of Western North Carolina, giving them the same level of care and attention they’d receive in the famed Bresse region of France.

Unlike the industrial broilers you’ll find in the supermarket our Bresse are raised slowly, moved daily on open pasture, with room to roam, scratch, and forage. They enjoy a natural diet of grasses and insects, supplemented with a finishing ration of milk and bread to develop their signature marbling and unparalleled flavor.

The result? Meat that’s richer, more succulent, and deeply flavorful, with firm, fine-grained texture and skin that crisps to a perfect golden brown. This is chicken as it was meant to be—slow-raised, naturally fed, and crafted with the same standards of excellence we bring to every cut of beef and pork.
